Always use spring water or filtered water for the preparation of your tea. Chlorine and other chemicals found in tap water destroy the flavors of most teas.
Never boil water for green or white tea, let infuse only for a very short time (approx. 1 minute) to avoid bitterness.
Always boil water for black tea, let infuse for approx. 2 to 3 minutes.
Never boil water for iced tea. Place loose tea in cold spring water and let it infuse for one night in your refrigerator. Remove loose tea the next morning and enjoy your iced tea for a day or two.
