« Parfait aux Fraises »

Strawberry Parfait

To be prepared the same day
Makes: 4 servings
Time: Approx. 30 minutes

INGREDIENTS

• 1 Quart strawberries washed & dried
• 1/4 cup sugar
• 1 cup heavy cream
• 1/2 teaspoon grated rind of lemon
• 2 tablespoons of violet or rose syrup

PREPARATION

Cut the strawberries into quarters.

Chill bowl and beaters for whipping the cream..

Whip cream at high speed, gradually adding the sugar, until cream holds.
.
Sprinkle in the lemon peel and the flower syrup, and beat until stiff.

SERVING

Use 4 small glasses
Layer the strawberries and the cream twice in each glass starting with the cream. Leave the dessert in the freezer. Remove about 5 to 10 minutes prior to serving.
