Trois Crepes Patisserie

Tarte aux Poires et au Chocolat

For 6 persons

Prep. time: 30 minutes
Baking time: 20 minutes

     

Ingredients:

5 juicy Bartlett pears
1 buttery & flaky pastry dough
9 ounces of dark unsweetened chocolate
3.5 ounces of butter
3.5 ounces of powdered cane sugar
1 tablespoon of bourbon vanilla extract

Recipe:

  • Preheat the oven to 300 degrees
  • Spread and flatten the dough in an oven safe tart dish
  • Pick the dough with a fork
  • Bake the dough for 20 minutes
  • During this time, peel the pears and poach them in a pan with about 4 inches of water and the cane sugar
  • Let the pears cook for about 10 minutes, add the bourbon vanilla extract
  • Wait an additional minute or two, take the pears out and cut them in half in a dish
  • In another pan filled with boiling water, place a bowl and let the chocolate and butter melt in it until the mixture is very smooth
  • When the dough is just golden take the dish out, pour the chocolate sauce in the center, cut your half pears in fine slices and let them sit on top of the chocolate (don't push them in) to form like a flower
  • Let the tart cool off and the chocolate harden

Tip: Crush a few pistachios and spread them on the tart.
