Poires Earl Grey

Pears poached in Earl Grey Tea,
served with Bourbon Vanilla Ice Cream

For 4 persons

Prep. time: 30 minutes

     

Ingredients:

Preparation ... the night before you plan to serve the pears:

  1. Prepare the Earl Grey tea. Do not boil the water, place the tea in a bag and let it sit within 4-1/2 cups of fresh spring water, refrigerate (refrigerating avoids bitterness).
  2. The next day, peel the pears, cut them in half and core them.
  3. In a large saucepan, bring the tea, lime juice and sugar to a boil, stirring to dissolve the brown sugar.
  4. Add the pears and poach for about 10 minutes.
  5. Remove the pears and allow to cool.
  6. Continue to boil the poaching liquid until it has the consistency of syrup. Remove from stove and allow to cool.

To serve:

Divide the pears among 4 plates, pour some of the syrup over them. Garnish each with a scoop of Bourbon vanilla ice cream on the side and serve.
