Poires Earl Grey
Pears poached in Earl Grey Tea,
served with Bourbon Vanilla Ice Cream |

Ingredients:
Preparation ... the night before you plan to serve the pears:
- Prepare the Earl Grey tea. Do not boil the water, place the tea in a bag and let it sit within 4-1/2 cups of fresh spring water, refrigerate (refrigerating avoids bitterness).
- The next day, peel the pears, cut them in half and core them.
- In a large saucepan, bring the tea, lime juice and sugar to a boil, stirring to dissolve the brown sugar.
- Add the pears and poach for about 10 minutes.
- Remove the pears and allow to cool.
- Continue to boil the poaching liquid until it has the consistency of syrup. Remove from stove and allow to cool.
To serve:
Divide the pears among 4 plates, pour some of the syrup over them. Garnish each with a scoop of Bourbon vanilla ice cream on the side and serve.
