Trois Crepes Patisserie

« FLAN A LA CITROUILLE »
      French Pumpkin Flan

Preparation Time : 30 minutes
Baking time: 1 hour
Serves : 6 to 8 pers.

Ingredients

  • 1-1/4 cup sugar
  • 1/4 cup cool water
  • 1-1/2 cup soft cooked and mashed pumpkin
  • 1/2 cup grated ginger
  • 1/2 teaspoon nutmeg
  • 3/4 teaspoon cinnamon
  • 5 large eggs
  • 2 egg yolks
  • 2 teaspoons vanilla extract
  • 2-1/4 cup milk

PREPARATION:

  1. Set a large pan of cold water with ice near the stove.
  2. Combine 1/2 cup of the sugar and 1/4 cup water in a small, heavy saucepan over low heat. Cook, stirring occasionally until sugar is dissolved.
  3. Cover pan and bring to a boil. Boil about 3-5 minutes, until syrup is deep amber.
  4. Uncover pan, remove from heat and plunge bottom of the pan into cold water.
  5. Pour caramel immediately into a 9" round glass pie pan and swirl until the bottom is coated, allow to cool.
  6. Heat oven to 325 degrees. In a large bowl, combine pumpkin, 3/4 cup sugar, spices, eggs, and egg yolks.
  7. Mix in vanilla and milk.
  8. Pour into caramel - lined pie pan. Set into a roasting pan. Fill pan with very hot water to halfway up the sides of the dish.
  9. Cover roasting pan loosely with foil and bake for approx. 60 minutes. (Thin bladed knife should come out clean.)
  10. Let cool to room temperature in the water bath. Remove and chill over night.

To Serve:
Un mold flan onto serving dish.
To un mold, run a sharp knife around flan, put serving dish on top and quickly flip over.
For decoration, use some holiday stencils and some Confection sugar.
